All-grain beer is beer made from scratch using crushed, malted grains, as opposed to using malt extract. The process involves converting the starches in the grains into fermentable sugars through mashing, then boiling the resulting wort, adding hops, and fermenting it with yeast. This method gives us more control over the final flavor profile and characteristics of the beer. We use rainwater from Gidgegannup and grain grown and malted from WAs western wheatbelt.
Sour beers, also known as sour ales or wild ales, are characterized by their tart, acidic, and often complex flavors. These beers achieve their sourness through the use of wild yeasts and bacteria during fermentation.
